Soft salmon and crunchy greens in a crisp pastry shell

Serves 4
Ready in 1 hour 10 minutes
Price per serving £1.20

4 frozen salmon fillets
250ml milk
1 bay leaf (optional)
25g butter
25g plain flour
200g frozen broccoli, steamed and cut into bite-size pieces
500g frozen puff pastry, thawed
Flour, for rolling out
1 egg, beaten

  1. Preheat the oven to 220C/200C Fan/Gas 7. Poach the fish in the milk with the bay leaf for 10 minutes. Flake the fish, reserving the milk.
  2. Melt the butter in a small pan and stir in the flour. Whisk in the milk, bring to the boil, whisking. Mix with the salmon and broccoli, season and leave to cool.
  3. Roll out the pastry on a floured surface to an oblong. Lay on a baking tray and put the salmon mixture on one side. Brush the edges with egg. Fold over and press the edges together. Cut slits in the top. Brush with egg and bake for 25-30 minutes.

150g frozen diced onion
2tbsp oil
1tbsp frozen chopped garlic
2tbsp Asda Madras Curry Powder
454g pack Asda Frozen Diced Casserole Lamb
400g can Asda Chopped Tomatoes with Chilli and Peppers
200ml lamb stock
250g frozen sliced peppers
50g creamed coconut, grated
Frozen white rice, to serve

  1. Cook the onion in the oil for 5 minutes. Add the garlic and curry powder and cook for 2 minutes.
  2. Add the lamb, tomatoes and stock. Heat until simmering, cover and cook for 55 minutes adding the peppers and coconut for the last 15 minutes. Serve with cooked white rice.

2 x 392g cans Asda Minced Beef and Onions
1tbsp Asda Chilli Powder
2 x 300g cans pinto beans, drained and rinsed
2tbsp tomato purée
4 sun-dried tomatoes, drained and chopped
8 Asda Wheat Tortillas
Asda Salsa, soured cream and lime wedges, to serve

  1. Heat the minced beef and onions, chilli powder, pinto beans and tomato purée in a small pan and simmer for 4 minutes, stirring occasionally. Stir in the sun-dried tomatoes.
  2. Warm the tortillas in a hot oven or microwave for 1 minute, then spoon a little of the beef chilli into the centre of each one. Roll up and serve with the salsa, soured cream and wedges of lime.

25g pack Asda Dried Porcini Mushrooms
1 medium onion, chopped
2tbsp olive oil
350g Asda Arborio Rice
1 litre hot vegetable stock
285g can Asda Button Mushrooms, drained
25g butter
Chopped fresh parsley
50g grated mature Cheddar

  1. Soak the mushrooms in 200ml warm water for 20 minutes. Drain, reserving the water, and chop.
  2. Cook the onion in the oil until soft. Add the rice and stir over a low heat for 1 minute. Pour in the reserved liquid and stir.
  3. Add the stock, one ladleful at a time. When the rice is creamy, stir in the porcini and button mushrooms, butter and parsley. Sprinkle with cheese, to serve.

A speedy but satisfying couscous

Serves 4
Ready in 20 minutes

110g pack Asda Spicy Vegetable Couscous
400g can Asda Chick Peas, drained
2 peppers, deseeded and quartered
100g cherry tomatoes

  1. Put the couscous in a pan. Add the chick peas and 225ml boiling water, stir and bring to the boil. Remove from the heat.
  2. Grill the peppers and tomatoes until their skin wrinkles.
  3. Skin and slice the peppers and add to the couscous with the whole tomatoes. Stir to mix well.
